Why gumbo?

Gumbo is the African word for okra. Not only is it where the popular Afro-Louisiana dish gets its name, it is representative of this African food which has been maintained as a staple all throughout the African Diaspora. It is thus an example of cultural and historical continuity amongst African people globally.
